Calye Culinarya Bridges Food and History in Inspiring Culinary Seminar

By: Boks Musings

Bacoor City, Cavite — To celebrate the rich connection between food and Filipino heritage, culinary students and enthusiasts, as well as local officials, cultural advocates and known historians were treated to a flavorful trip back in time as Calye Culinarya hosted a full-day seminar and cooking competition at the Fynn Boutique Hotel, in this city, on Monday.

The event is topbilled by Chef Christopher Guado Carangian, popularly known as “Razorchef” – a Filipino culinary professional dedicated to preserving and promoting Filipino cuisine.

Carangian, who also Chairs Culinary Generals (an organization committed to culinary excellence and cultural heritage), shares that the event is “more than just a showcase of culinary skill, the event serves as a platform to immerse young chefs and food enthusiasts in the deeper story behind every dish.”

“Food is memory, identity, and resistance,” added Carangian, reflecting the event’s goal of reintroducing traditional Filipino dishes in modern kitchens while preserving their cultural roots.

From heirloom ingredients to indigenous cooking methods, participants were challenged not only to cook but to understand the why behind the how, adds Carangian.

To walk the talk, Carangian takes on the cooking demo and lecture on “Pancit Langlang” (a delicious combination of fresh miki and cellophane noodles with ground pork, flaked chicken, and tender-crisp vegetables) – a dish immortalized in Jose Rizal’s El Filibusterismo.

Another event resource is Lea Tagle Monzon, more popularly known as “Maestra Panaderia” who touched on healthy breads; followed by Dr. Ishmael Maharaja for everything “Halal.”

The highlight of the day was a spirited cooking competition where participants put a modern twist on historical Filipino dishes, judged by local culinary figures and food historians.

The energy was electric, the flavors unforgettable. Events like these reaffirm Calye Culinarya’s vision: to cultivate a new generation of culinary experts who are not only skilled in technique but grounded in heritage.

There would be more (events) like this, vows Carangian “because by bridging past and present through food, Calye Culinarya will ensure that the next chapter of Filipino cuisine will be as rich and meaningful as the last.”

Seen during Monday’s event is Bacoor City Mayor Stike Revilla, Cavite Historical Society figures such as Dr. Emmanuel Calairo and Jose Diaz, and award-winning visual artist, book designer, and food writer Ige Ramos.
